Used for direct works and for hard pasta, with 15-25% of acid.
It comes from carefully selected European and Italian wheats and is indicated for small and medium pieces with normal times of growing. It is good also for home-made bread with longer times of growing. The perfect balance glutine-starch makes this flour good to prepare fried pizzas and grown up pastas.
